Ingredients
6" flour tortillasPreheat oven to 350 degrees.
Cooking spray - Pam or similar
Sugar
Cinnamon
In a small bowl mix about 1/2 cup of sugar with about 1 teaspoon of cinnamon, you may adjust the amounts of either ingredient to get a nice cinnamony sugar product. The amounts will also depend on how many tortilla chips you want to make.
Spray both sides of one tortilla, lightly sprinkle one side with the sugar/cinnamon mix and lay that tortilla, sugar/cinnamon side down, on a cutting board.
Sprinkle (a bit heavier) the top side of the tortilla with the sugar/cinnamon mix. Continue the process with the other tortillas, stacking each tortilla on top of the other until you have a stack of not more than 6-8 tortillas on the cutting board. Using a pizza wheel or a large sharp knife cut the stack into 6 pieces (like a pizza) so that you have 6 stacks of triangle shaped pieces -
Working in batches, place the triangles in a single layer on a baking sheet and bake until the edges of the triangles are lightly brown, about 8 minutes.
Oven temps may vary so watch the first couple of batches and adjust the time accordingly.
Remove baked tortilla chips from the cookie sheet and place on a cookie rack to cool.
